Mediterranean Crostini with Chickpeas and Olives

Ingredients

  • Chickpea - 15.9 oz
  • Olive Oil - 0.3 cup
  • Garlic - 1 clove
  • Meyer Lemon Juice - 1 tablespoon
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste
  • Pitted olives - 8 pieces
  • Celery stalk - 1 stalk
  • French Baguette - 12 pieces

Step by Step guide

Step 1

In a food processor, combine chickpeas, 1/4 cup of olive oil, lemon juice, and minced garlic. Blend until smooth, then season with salt and pepper.

Step 2

In a small bowl, mix 1 tablespoon of olive oil, sliced olives, and finely chopped celery. Season with salt and pepper to taste.

Step 3

Toast the slices of bread until golden brown.

Step 4

Spread the chickpea mixture on the toasts, then top with the olive mixture and drizzle with the remaining olive oil. Season with salt and pepper and serve.
