Ingredients
- Olive Oil - 4 tablespoons
- Tomatoes - 4 pieces
- Dry White Wine - 1 cup
- Passata Tomato Sauce - 8 tablespoons
- Carrot - 1 piece
- Fennel - ¼ piece
- Celery salt - 1 piece
- Onion - 1 head
- Garlic - 2 cloves
- Sole fillets - 1 piece
- Langoustines - 1 piece
- Fish Oil - 1 qt
Step by Step guide
Step 1
In a large pot, heat the olive oil and add finely chopped carrot, celery, fennel, onion, and minced garlic. Sauté until soft. Add the fish (any fatty type) cut into small pieces and the langoustine.
Step 2
Add the white wine, chopped tomatoes, and tomato paste. Pour in the broth, cover with a lid, and cook for 1 hour.
Step 3
Remove from heat and gently mash to achieve a fairly homogeneous mixture. Season with salt and pepper to taste and serve warm with pieces of warm buttered bread.
