Ingredients
- French Baguette - 1 piece
- Goat cheese - 7.1 oz
- Orange Bell Peppers - 8 pieces
- Courgette - ½ piece
- Herbs - to taste
- Olive Oil - to taste
Step by Step guide
Step 1
Peel the zucchini and slice it into rings about 0.5 cm thick.
Step 2
Remove the seeds from the peppers and cut them in half lengthwise.
Step 3
Drizzle the prepared peppers and zucchini with a small amount of olive oil, season with salt to taste, mix, spread on a baking sheet, and roast in a hot oven until soft. Let cool.
Step 4
Cut the baguette in half lengthwise. Divide each half into 4 pieces. Toast the pieces in the oven for 5 minutes until a light crispy crust forms on top.
Step 5
Spread the soft goat cheese (preferably ricotta) on the baguette slices. Place 2-3 slices of zucchini on the cheese, and top with two halves of the pepper.
