Ingredients
- Tomatoes - 9.9 oz
- Pasta (corkscrew) - 4.2 oz
- Morels - 0.7 oz
- Pork Blood - 3.5 oz
- Cream - 2.8 oz
- Egg white - 2 pieces
- Butter - 1.4 oz
- Salt - to taste
Step by Step guide
Step 1
Prepare a white sauce using chicken broth. Blanch the tomatoes, strain them through a sieve, and combine with the sauce.
Step 2
Cook the pasta and cut it into pieces 0.5 cm long. Clean the fresh mushrooms (truffles or mushrooms), boil them, and slice them thinly. Cut the ham in the same way.
Step 3
Add the ingredients to the sauce and bring to a boil, stirring.
Step 4
Before serving, season the soup with cream mixed with the beaten egg yolks and butter. To prevent the yolks from curdling, the soup temperature should be 75–176°F.
