Description
To prepare the parboiled rice, good long-grain rice (such as basmati) should be soaked overnight, but soaking for 2-3 hours is also acceptable. Then, bring water to a boil in a large pot, using a ratio of 1 liter of water for every 1 cup of rice. Add the rice to the boiling salted water, draining the soaking water. Cook on low heat so that the water is bubbling but not boiling for 2-3 minutes. The rice should remain slightly firm inside.

- Rice - 1.1 oz
- Basil - 0.2 oz
- Cheese Spread - 2.1 oz
- Bay leaf - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Prepare the parboiled rice. Cut the lean part of the bacon into cubes and lightly fry it with finely chopped onion until pale golden. Slice the cabbage, carrot, turnip, leek, and potato, add basil, thyme, bay leaf, and sauté.
Step 2
Pour in the broth or water, add peeled and seeded tomatoes, green peas, and chopped green beans, and simmer on low heat for 8-10 minutes, then add the rice and bring to a boil.
Step 3
Mash the remaining fatty bacon with garlic and stir it into the soup. Serve grated cheese separately.
