- Canned Pork with Beans - 15.9 oz
- Vegetable Oil - 1 tablespoon
- Turnips - 2 pieces
- Garlic - 5 cloves
- Celery salt - 2 stalks
- Orange Bell Peppers - 1 piece
- Chicken Broth - 3 qt
- Tomatoes - 15.9 oz
- Frozen green bean pods - 3.5 oz
- Broccoli - 3.5 oz
- Bay leaf - 2 pieces
- Oregano - 1 tablespoon
- Thyme - 1 teaspoon
- Salt - to taste
- Pasta (corkscrew) - 4.6 oz
Step by Step guide
Step 1
Soak the beans for 8–10 hours. If you're short on time, you can cook them directly or use canned beans. Place the soaked beans in a small pot, cover with water, and cook over medium heat for one and a half hours.
Step 2
After one hour of cooking the beans, start preparing the other ingredients. Take a large pot and pour in the vegetable oil.
Step 3
Dice the onion, carrots, celery, and bell pepper into small cubes. Crush the garlic. Sauté, stirring, for about 8 minutes. Add the vegetable broth and beans. You can use canned tomatoes or chop fresh ones. Add them to the pot. Add the bay leaves and all the remaining spices. Bring the soup to a boil, cover, and simmer on low heat for one to one and a half hours.
Step 4
Ten minutes before serving, increase the heat and bring to a gentle boil. Add the pasta and cook for about 7 minutes until al dente.
