Mini Farinata with Spicy Sausage and Endive Salad
Ingredients
- Endive - 8.8 oz
- Chickpea - 6.2 oz
- Chicken Egg - 1 piece
- Spicy salami - 5.3 oz
- Rosemary - 1 sprig
- Garlic - 1 clove
- Olive Oil - 1 fl oz
- Salt - a pinch
- Ground Black Pepper - a pinch
- Water - 17 fl oz
Step by Step guide
Step 1
Sift the flour through a sieve, whisk well with water until lumps disappear. Add the egg, salt, and pepper.
Step 2
Heat the oil (30 g) in a pan with a sprig of rosemary, do not fry. Remove the rosemary and add the flavored oil to the flour.
Step 3
Grease 12 baking molds (diameter 7 cm) with olive oil. Pour 25 g into each mold. Bake in the oven at 482°F for 8–10 minutes. Remove from the oven and molds. Wipe the baking sheet with paper, re-grease the molds with oil, and pour in the remaining flour mixture.
Step 4
Cut the endive into small pieces. Sauté in a pan in two batches with two tablespoons of oil and a clove of garlic with the skin on. Sauté over high heat for 30 seconds. Do not salt.
Step 5
Slice the sausage into 18 pieces.
Step 6
Top 18 flatbreads with a bit of salad and a rolled slice of sausage.
