Miso soup with kale and tofu

  • Water - 5 cups
  • Green onions - 2 bunches
  • Grated Ginger - 2 teaspoons
  • Minced garlic - 1 clove
  • White miso paste - 3 tablespoons
  • Unfermented Soy Sauce - 2 teaspoons
  • Kale - 3.5 oz
  • Firm tofu - 4.2 oz

Step by Step guide

Step 1

In a medium-sized pot, bring the water to a boil over medium heat.

Step 2

Add the green onions, ginger, and garlic. Reduce the heat, cover, and simmer for about 10 minutes.

Step 3

Add the miso paste and stir until dissolved.

Step 4

Add the soy sauce, kale, and tofu.

Step 5

Continue to simmer for about 5 minutes until the kale is tender. Serve immediately.
