Ingredients
- Chicken Broth - 2 qt
- Chicken Egg - 4 pieces
- Homemade Chicken Sausage - 15.9 oz
- Vermicelli - 7.8 oz
- Chili Flakes - 1 tablespoon
- Kale - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a large pot, bring the turkey broth to a boil over high heat. Reduce the heat to medium.
Step 2
In a large bowl, using an electric mixer on medium or high speed, beat the egg whites until they form soft peaks, about 2-3 minutes. During this process, gradually add the lemon juice.
Step 3
Separately whisk the egg yolks until they lighten in color, then gently fold them into the egg whites.
Step 4
Slowly pour half a cup of hot broth into the eggs in a thin stream to temper them.
Step 5
Gently pour the beaten egg mixture into the broth, stirring constantly to prevent the egg whites from curdling. Continue stirring for 5 minutes, until the broth thickens.
Step 6
Immediately after that, add the sliced sausage, and after about 5 minutes, stir in the noodles. Cook the soup for another 5–7 minutes, until the pasta is al dente and has absorbed some of the liquid.
Step 7
Then remove the pot from the heat, season with crushed red pepper flakes, add the finely sliced cabbage leaves, and mix well. Cover with a lid.
Step 8
Let the soup sit covered for 5 minutes to allow the cabbage to soften. Then add lemon juice, salt, and pepper to taste.
