Moroccan Chickpea and Ginger Soup
Ingredients
- Garlic - 1 clove
- Carrot - 2 pieces
- Onion - 1 head
- Grated Ginger Root - 1 tablespoon
- Vegetable Oil - 1 tablespoon
- Ground Cumin - 2 teaspoons
- Smoked salt - 1 teaspoon
- Chickpea - 14.1 oz
- Chicken Broth - 1 qt
- Salt - to taste
- Ground Black Pepper - to taste
- Chopped Green Onions - to taste
Step by Step guide
Step 1
Chop the carrots, onion, and garlic; grate the ginger. Sauté the vegetables in vegetable oil until soft.
Step 2
Add the cumin and cook, stirring, for another 2 minutes. Pour in the vegetable broth and simmer the soup for 15 minutes.
Step 3
At the very end, add the chickpeas, smoked paprika, salt, and pepper. Blend the soup in a blender, then return it to the stove, bring to a boil, and turn off the heat.
Step 4
Serve, garnished with chopped cilantro.
