Moroccan Chickpea Soup
Ingredients
- Olive Oil - 1 tablespoon
- Onion - 1 head
- Celery stalk - 2 stalks
- Ground Cumin - 2 teaspoons
- Vegetable Broth - 20 fl oz
- Canned tomatoes - 14.1 oz
- Canned chickpeas - 14.1 oz
- Frozen fava beans - 3.5 oz
- Lemon Zest - 1 tablespoon
- Lemon Juice - 1 tablespoon
- Parsley - 0.6 oz
Step by Step guide
Step 1
Heat the oil in a large skillet and sauté the onion and celery for 10 minutes until soft, stirring frequently. Add the cumin and cook for another minute.
Step 2
Increase the heat, then add the broth, tomatoes, chickpeas, and black pepper.
Step 3
Cook for 8 minutes. Add the beans and lemon juice, cook for another 2 minutes. Season to taste.
Step 4
Top with lemon zest and chopped parsley. Serve with flatbread.
