Description
Salted lemons are sold by weight in Moroccan markets. The wedges, their zest, and juice are essential ingredients in the local cuisine.

- Ocean salt - 0,7 glasses
- Olive Oil - 2 spoons
Step by Step guide
Step 1
Place half of the lemons into boiling water and let them simmer for five minutes. Remove them and dry with paper towels. Once the lemons have cooled enough to handle, cut each one into 8 wedges and remove the seeds from each wedge.
Step 2
Pour salt into a bowl, add lemon wedges, and mix well. Transfer the mixture to a six-liter jar and seal it tightly with a lid. Squeeze the juice from the remaining lemons and pour it over the wedges.
Step 3
Leave the jar at room temperature for five days, shaking it gently and stirring its contents once a day. Then, add olive oil and transfer it to the refrigerator, where it can be stored for up to a year.
