Muhammara made from roasted peppers
Ingredients
- Orange Bell Peppers - 28.2 oz
- Mild Chili Spice - 7.1 oz
- Garlic - 1 head
- Black Pomegranate Molasses - 1 fl oz
- Smoked salt - 1 tablespoon
- Black Cumin (Cumin) - 3 spoons
- Salt - 1 tablespoon
- Olive Oil - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Arrange all the peppers on the greased baking trays.
Step 3
Drizzle the peppers with 30 ml of oil, cover with foil, and place in a preheated oven at 356°F for 40 minutes.
Step 4
Remove the peppers from the oven, place them in a bowl, cover with plastic wrap, and let them "sweat" for about 10 minutes.
Step 5
Remove the skin and seeds from the sweet peppers and finely chop the flesh. For the chili peppers, remove the seeds (or keep them if you prefer more heat) and chop them as well.
Step 6
Peel the garlic, crush it using a press, and add it to the peppers.
Step 7
Grind the cumin in a mortar with salt and mix it with the peppers.
Step 8
Add pomegranate juice and smoked paprika, then stir.
Step 9
Place the peppers in sterilized jars and fill them with olive oil up to the neck.
Step 10
Seal tightly with a lid and leave for 2 days. Then transfer the jars to the refrigerator and store for no more than 4 months.
