Ingredients
- Dried Chinese mushrooms - 1.8 oz
- Pickled Chanterelles - 2.5 oz
- Onion - 1 head
- Vegetable Oil - 1½ tablespoons
- Chicken Egg - 1 piece
- Garlic - 2 cloves
- Chopped Sage Leaves - 1½ tablespoons
- Salt - to taste
Step by Step guide
Step 1
Rinse the dried mushrooms and soak them in cold salted water for 3–4 hours.
Step 2
Boil the egg hard.
Step 3
Then, in the same water, boil the mushrooms until tender, drain, and finely chop.
Step 4
Peel the onion, wash it, finely chop it, and sauté it until golden in heated oil.
Step 5
Add the chopped mushrooms (you can optionally add a little mushroom broth), mix, and simmer for 15 minutes.
Step 6
Then add the finely chopped pickled mushrooms, peeled and crushed garlic, season with pepper to taste, and mix well.
Step 7
Cool the prepared caviar and place it in a deep salad bowl.
Step 8
Garnish with parsley and finely chopped egg.
