Mushroom cream soup with champignons
Ingredients
- Champignons - 17.6 oz
- Onion - 2 heads
- Wheat Flour - 2 spoons
- Butter - 2 spoons
- Olive Oil - 2 spoons
- Chicken Broth - 20 fl oz
- Cream 22% - 7 fl oz
- Scallions - 3 stalks
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Chop the mushrooms and onion into small pieces and sauté them in olive oil until soft.
Step 2
Prepare the broth in advance.
Step 3
Place in a blender cup, pour in a cup of broth, and blend until smooth.
Step 4
In a saucepan, melt the butter and stir in the flour, cooking for a couple of minutes. Then, gradually add the remaining broth while continuously stirring, and bring it to a boil.
Step 5
Add the mushroom mixture, stir well, and bring it back to a boil. Season to taste and let the soup simmer on low heat for another 5–7 minutes.
Step 6
Pour in part of the cream, heat it on the stove, and then remove from heat.
Step 7
Serve garnished with cream, chopped green onions, freshly ground black pepper, and croutons - which can be cut into small pieces and added to the soup.
