Description
Mushroom Fricassee under a Puff Pastry Dome
Ingredients
- Fresh forest mushrooms - 15.9 oz
- Puff Pastry - 8.1 oz
- Cream - 3 fl oz
- Chicken Egg - 1 piece
- Onion - 1 piece
- Parsley - 1 bunch
- Garlic - 2 cloves
- Lemon Juice - 1 tablespoon
- Fresh sage - to taste
- Extra virgin olive oil - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Finely chop the onion. Clean the mushrooms and cut them into large cubes. Squeeze the juice from half a lemon.
Step 2
In a skillet with olive oil, sauté the onion, two cloves of garlic, chopped parsley, and two leaves of fresh sage. After 2 minutes, remove the garlic from the skillet and add the mushrooms. Season with salt, generously pepper, and continue to sauté the mushrooms with the herbs for 5 minutes. Then add the lemon juice and cream, stir, and continue cooking until the sauce thickens (3-4 minutes).
Step 3
Place an equal amount of the mushroom mixture into individual ceramic pots that can be used in the oven. Cut out circles from the puff pastry that exceed the diameter of the top edge of the pots by 1 cm. Moisten the edges of the pots with water and cover them with the puff pastry circles like a lid, ensuring that the pastry adheres to the outer walls.
Step 4
Brush the puff pastry 'lids' with beaten egg and place in an oven preheated to 392°F for 20-25 minutes (until the puff pastry rises and turns golden brown).
