  • Mushroom broth - 3 fl oz
  • Olive Oil - 0 fl oz
  • 10% cream - 1 fl oz
  • Butter - 1.1 oz
  • Parmesan Cheese - 1.1 oz
  • 10% Sour Cream - 0.4 oz
  • Aspen mushrooms - 2.1 oz
  • Frozen porcini mushrooms - 1.1 oz
  • Chives - 0 oz
  • Salt - to taste

Step by Step guide

Step 1

Sauté the Arborio rice in olive oil.

Step 2

Add the mushroom broth and cream.

Step 3

Then thicken the risotto with butter and grated parmesan.

Step 4

Sauté the mushrooms separately.

Step 5

Finely chop the chives.

Step 6

Plate the risotto and mushrooms, sprinkle with chopped chives, and season with salt.
