I love mushroom soup, especially with barley! It's a classic, in my opinion.
Ingredients
- Pearl barley - 3.5 oz
- Dried Chinese mushrooms - 1.8 oz
- Chicken Broth - 1 qt
- Salad Potatoes - 3 pieces
- Carrot - 1 piece
- Onion - 1 head
- Herbs - 1 bunch
- Salt - to taste
- Ground Black Pepper - to taste
- Sour Cream - to taste
Step by Step guide
Step 1
Soak the dried porcini mushrooms for 15 minutes, season with salt, and cook them in the same water. This can be done in advance, and after cooling, store in the refrigerator until ready to use.
Step 2
Add the mushroom broth and rinsed barley to the boiling chicken broth, and cook.
Step 3
Add the potatoes, carrot, onion, and chopped mushrooms.
Step 4
Simmer on low heat until the vegetables are cooked through.
Step 5
You can add any spices to taste, serve with herbs and sour cream, and croutons.
