Ingredients
- Potato - 1 piece
- Fresh Mushrooms - 6 pieces
- Celery stalk - 1 piece
- Carrot - 1 piece
- Onion - 1 head
- Butter - 1.8 oz
- Mushroom seasoning - 1 qt
- Wheat Flour - 1 tablespoon
- Cream - 5 fl oz
- Ground Caraway - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Grated Pecorino Pepato Cheese - to taste
Step by Step guide
Step 1
Finely chop the onion. In a pot, heat the butter and sauté the onion until golden brown. Add caraway seeds and pepper.
Step 2
Add the mushroom broth to the pot and boil for 1 minute.
Step 3
Chop the vegetables coarsely: potato (large tuber, you can use two small ones), a small carrot, and one celery stalk. Slice the champignons (if the mushrooms are small, you can use more than 6 pieces). Add the vegetables and mushrooms to the pot, season with salt, and cook for 20 minutes.
Step 4
Mix a tablespoon of flour with a small amount of butter to form a thick, homogeneous mass. Gradually add this mixture to the soup while stirring well to thicken.
Step 5
Add the cream to the pot (you can use 10% cream or a richer one) and heat the soup well.
Step 6
When serving, you can sprinkle with grated cheese.
