Description
This aromatic soup can be made with any mushrooms: fresh, foraged, or frozen.
Ingredients
- Frozen White Mushrooms - 10.6 oz
- Salad Potatoes - 3 pieces
- Onion - 1 head
- Carrot - 1 piece
- Millet - 1.4 oz
- Parsley - 1 bunch
- Green peppercorns - to taste
- Bay leaf - to taste
- Salt - to taste
- Clarified Butter - 1 tablespoon
- Sour Cream - 1 tablespoon
Step by Step guide
Step 1
Rinse the millet thoroughly and soak it in hot water. Cut the mushrooms into large pieces and soak them in cold water (2.5 liters), add the peppercorns, bay leaf, and bring to a boil over medium heat. Reduce the heat and add the millet.
Step 2
Peel the potatoes and cut them into cubes, add them to the soup, and after 15 minutes, add the onion sautéed in clarified butter and the sliced carrot.
Step 3
Cook for another 5–10 minutes, add the chopped parsley, cover the pot with a lid, and remove from heat.
Step 4
Let it steep for about 30 minutes and serve with sour cream.
