Mushroom Soup with Pancetta and Sake

Ingredients

  • Dried Chinese mushrooms - 2.1 oz
  • Chicken Broth - 4 cups
  • Pancetta - 8.8 oz
  • Fresh basil leaves - 8.8 oz
  • Black sesame seeds - 2 tablespoons
  • Sweet Chili Sauce - 2 tablespoons
  • Scallions - 2 stalks
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Sake - 1 fl oz

Step by Step guide

Step 1

In a bowl, combine the mushrooms, 1 cup of broth, and sake. Let it sit for 30 minutes.

Step 2

Heat a skillet over medium heat and sauté the finely chopped pancetta for 5-7 minutes until crispy. Transfer to a paper towel-lined plate using a slotted spoon.

Step 3

In a pot, combine the remaining broth and 2 cups of water. Place over medium heat and bring to a boil, then add the mushrooms along with the liquid, pancetta, and chopped spinach. Next, add the sesame oil and chili sauce. Season with salt and pepper to taste and serve, garnished with chopped green onions.
