Ingredients
- Onion - 1 head
- Vegetable Oil - 1 tablespoon
- Garlic - 2 cloves
- Fresh Mushrooms - 8.8 oz
- Ham - 10.6 oz
- Sauerkraut - 10.6 oz
- Pearl barley - 0.3 cups
- Campbell's Beef Broth - 4 cups
- Bay leaf - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat the vegetable oil in a pot and add the finely chopped onion. Sauté until soft for 5-7 minutes, then add the minced garlic and cook for another minute.
Step 2
Add the thinly sliced mushrooms and cook until all the liquid has evaporated.
Step 3
Add the finely chopped ham (2 cups), sauerkraut, broth, barley, bay leaves, salt, and pepper. Bring to a boil, reduce the heat, cover, and simmer until the barley is cooked, about 30-45 minutes.
