Ingredients
- Mussels - 3 lbs
- Onion - 1 head
- Leek - 1 stalk
- Apple Wine - 8 fl oz
- Mayonnaise - 8.8 oz
- Meyer Lemon Juice - 1 tablespoon
- Whipped Cream - 3 tablespoons
- Chopped Sage Leaves - 1 tablespoon
- White Pepper (whole) - a pinch
- Sugar - a pinch
- Salt - a pinch
Step by Step guide
Step 1
Clean and chop the onion.
Step 2
Wash and cut the leek into small pieces.
Step 3
Bring the vegetables with white wine to a boil in 250 ml of water.
Step 4
Clean the mussels with a brush under cold running water, remove the 'beards', and cook in the boiling broth covered on high heat for 10 minutes.
Step 5
If all the shells have opened, they are ready. Drain the water from the mussels and let them cool. Discard the empty shells. Place the half shells with mussels in a daisy pattern on four serving plates.
Step 6
Reduce the broth from the mussels until only 0.5 cup of liquid remains.
Step 7
Mix the mayonnaise with the cooled mussel broth, lemon juice, salt, ground pepper, and sugar.
Step 8
Add whipped cream to the mayonnaise. Distribute the sauce over the shells with mussels and sprinkle with parsley.
