Nettle and Sorrel Soup
Ingredients
- Nettle - 17.6 oz
- Sorrel - 10.6 oz
- Onion - 1.1 oz
- Wheat Flour - 1.2 oz
- Vegetable Oil - 2 fl oz
- Sour Cream - 5.3 oz
- Whole egg - 5 pieces
- Chopped Sage Leaves - 0.7 oz
- Water - 25 fl oz
- Salt - to taste
Step by Step guide
Step 1
Sort through the young nettle, rinse it, pour boiling water over it, and strain it. Then rinse with cold water, squeeze out the excess water, and chop finely.
Step 2
Sauté the onion in oil in a pot, add the chopped nettle, and sauté until soft. Then add the sorrel, cover the pot with a lid, and simmer for 10–12 minutes.
Step 3
Dissolve the sautéed flour in hot water, mix well, and add to the soup while stirring continuously. Add water to the soup and bring it to a boil.
Step 4
Beat the yolks with sour cream and stir them into the soup, making sure it does not boil.
Step 5
Before serving, add finely chopped parsley to the soup.
