Ingredients
- Pickled Nettle - 3.5 oz
- Sorrel - 1.8 oz
- Spinach - 1.8 oz
- Radish - 3.5 oz
- Cucumbers - 5.3 oz
- Dill - 0.4 oz
- Parsley - 0.4 oz
- Bread Kvass - 1 qt
- Beetroot - 17 fl oz
- Horseradish Leaves - to taste
- Mustard Greens - to taste
- Chicken Egg - 6 pieces
- Smoked Eel - 10.6 oz
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Boil the eggs hard.
Step 3
Thoroughly wash the nettles and other greens to remove sand and dirt. Pat dry.
Step 4
Remove the leaves from the tough stems of the nettles, and cut off the stems of the sorrel. Chop all the leaves.
Step 5
Finely chop the dill and parsley.
Step 6
Cut the radishes and cucumbers into thin strips.
Step 7
Mix the horseradish and mustard. Gradually, while constantly whisking, pour in the kvass and beet juice until the horseradish and mustard are completely dissolved. Taste and salt to your liking.
Step 8
Arrange the vegetables and herbs on plates, then pour over them a mixture of kvass and beet juice.
Step 9
Place a boiled egg and smoked fish on each plate.
Step 10
Serve the borscht on a hot day.
