- Pumpkin - 17.6 oz
- Onion - 1 head
- Leek - 2 stalks
- Butter - 1.8 oz
- Milk - 17 fl oz
- Chicken Broth - 17 fl oz
- Potato - 2 pieces
- Sugar - 1 tablespoon
- Cream 22% - 3 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the pumpkin, remove the seeds, and cut the flesh into large cubes.
Step 2
Peel and chop the onion and leek.
Step 3
Melt the butter in a pot, add both types of onions, and sauté for 5 minutes until golden.
Step 4
Add the pumpkin. Cook, stirring, over low heat for another 5 minutes.
Step 5
Add sugar, season with salt and pepper. Simmer for 5 minutes.
Step 6
Peel the potatoes, wash them, dry them, and cut them into medium-sized cubes.
Step 7
Pour the hot milk into the pot while stirring, then add the hot broth and add the potatoes.
Step 8
Cook covered for 1 hour, until the vegetables are tender.
Step 9
Then puree the soup using a blender, return it to the pot, and heat it through.
Step 10
Add cream when serving.
