Norwegian Cod Soup with Vegetables

Ingredients

  • Onion - 2 heads
  • Carrot - 3 pieces
  • Herbs - 1 bunch
  • Garlic - 3 cloves
  • Wheat Flour - 1 tablespoon
  • Butter - 1.1 oz
  • Tomatoes - 7.1 oz
  • Dry White Wine - 3 spoons
  • Cod - 2 lbs
  • Salt - to taste
  • Cream - 2 spoons
  • White Pepper (whole) - to taste

Step by Step guide

Step 1

Rinse the fish and cut it into pieces. Cover the fish with cold water and bring to a boil. Skim off any foam and cook for 5 minutes.

Step 2

Peel the onion and carrot, then add them to the broth. Season with salt and simmer for 30 minutes. Remove the onion and carrot, blend them until smooth, and return them to the broth.

Step 3

Sauté the flour in butter. Add minced garlic.

Step 4

Add the garlic and cream sauce to the broth. Bring the soup to a boil.

Step 5

Pour the wine into the soup.

Step 6

Peel the tomatoes, dice them, and add to the soup. Season with salt and pepper, and cook for 7 minutes.

Step 7

Pour the cream into the fish soup and remove from heat. Sprinkle with chopped herbs.
