Description
Another popular version of okroshka is made with kefir and mineral water. It's perfect for those who miss the fizziness of kvass and the tangy taste of fermented milk. The recipe is, of course, basic — you can change the ingredients as you like.
Ingredients
- Potato - 4 pieces
- Chicken Egg - 4 pieces
- Spicy salami - 5.3 oz
- Cucumbers - 5 pieces
- Radish - 7.8 oz
- Scallions - 2 bunches
- Dill - 1 bunch
- Kefir - 1 qt
- Sparkling water - 30 fl oz
- Salt - to taste
- Sour Cream - to taste
- Vinegar essence - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Peel the potatoes, cut them into small cubes, and boil until tender.
Step 3
Boil the eggs hard, rinse them under cold water, peel, and chop finely.
Step 4
Cut the salami into small cubes.
Step 5
Grate the radish using a large grater.
Step 6
Finely chop 4 cucumbers.
Step 7
Finely chop the onion.
Step 8
Sprinkle part of the onion with salt and mash it.
Step 9
Grate one cucumber using a coarse grater.
Step 10
Combine all the ingredients in a large pot. Pour in cold kefir. Add cold sparkling water. Season with salt. Add vinegar to taste.

Stir well. Allow to cool.
