- Beef tongue - 2 lbs
- Whole egg - 4 pieces
- Quail Egg - 5 pieces
- Horseradish Leaves - 0.7 oz
- Matsoni - 1 qt
- Mineral water - 422 qt
- Sour Cream - 1.1 oz
- Dijon Mustard - 1.1 oz
- Dill - 0.2 oz
- Scallions - 1.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the dressing for the okroshka: mash the boiled egg yolks with a fork, add mustard and sour cream, and mix until smooth. Then add salt, pepper, and finely chopped green onions, and stir well.
Step 2
Dice the potato, cucumber, radish, and tongue into 5 mm cubes.
Step 3
Combine the vegetables and the tongue with the okroshka paste, and place all the ingredients into one container.
Step 4
Mix the matsoni with mineral water. Pour it into a container with the vegetables and tongue. Stir well. Serve the resulting okroshka in bowls. Garnish with a boiled quail egg cut in half and chopped green onions.
