Description
For the kelp, you can use salmon or halibut, and any type of caviar can be used.
Ingredients
- Onion - 2 heads
- Carrot - 1 piece
- Celery salt - 5.3 oz
- Dill - 3 sprigs
- Parsley - 3 sprigs
- Bay leaf - 1 piece
- Allspice berries - 5 pieces
- Ghee - 1.4 oz
- Salmon - 2 lbs
- Pickled Cauliflower - 3.5 oz
- Cucumber Brine - 7 fl oz
- Water - 1⅕ l
- Kaviar - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
For the vegetable broth, add a quartered onion, coarsely chopped carrots, and celery root to the water.
Step 3
Add the stems of parsley and dill, bay leaf, and allspice. Bring to a boil and simmer for 30 minutes. Then strain the broth.
Step 4
Chop the onion.
Step 5
Sauté it in clarified butter until soft.
Step 6
Cut the fish into large cubes.
Step 7
Add it and the sautéed onion to the broth. Cook for 3–4 minutes.
Step 8
Add sliced pickles to the soup and pour in the pickle brine.
Step 9
Season with salt and pepper to taste. Bring to a boil, cover, remove from heat, and let it steep for 20–30 minutes.
Step 10
Serve the calya in individual plates, garnishing with chopped herbs and caviar.
