Ingredients
- Olive Oil - 3 fl oz
- Water - 1 fl oz
- Sugar - 3.5 oz
- Gelatin - 0.4 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Soak the gelatin in cold water.
Step 3
Prepare a syrup by boiling 50 ml of water with 100 grams of sugar, then cool it down to 158°F.
Step 4
Zest the lemon and squeeze out its juice.
Step 5
Blend the syrup in a blender.
Step 6
While continuing to whisk, gradually pour in 100 ml of olive oil in a thin stream.
Step 7
Add lemon juice and stir again.
Step 8
Squeeze the excess water from the gelatin, transfer it to a saucepan, and melt it over low heat. Pour the gelatin into the butter and syrup mixture while keeping the blender running.
Step 9
Add the zest to the mixture.
Step 10
Pour the resulting mixture into ice cube trays. Place them in the freezer until solid.
Step 11
The finished jelly can be enjoyed as a dessert or added to salads.
