Description
Tapenade is made exclusively from olives. Green olive tapenade is a heresy! You can vary the proportions of the ingredients to your taste. Tapenade freezes very well and can be stored in the refrigerator for several days. Serving suggestion: serve tapenade as an appetizer or at a picnic, placing it in a bowl so everyone can spread it on toast.
Ingredients
- Pitted olives - 8.8 oz
- Mustard Greens - 1 teaspoon
- Anchovies - 3.5 oz
- Capers - 7.1 oz
- Olive Oil - 4 fl oz
- Ground Black Pepper - a pinch
Step by Step guide
Step 1
Rinse the anchovies under cold running water for 5 minutes to remove the salt. Drain the water.
Step 2
Place them in a container or food processor with the olives, draining the juice, and the capers without liquid. Blend with a mixer. Add the mustard and pepper. Mix well.
Step 3
Continue blending while gradually pouring in the olive oil. The mixture should have a dough-like consistency. Place it in the refrigerator and take it out a few minutes before serving.
