Ingredients
- Onion - 4 heads
- Butter - 1.1 oz
- Olive Oil - 3 tablespoons
- Potato - 1 piece
- Water - 20 fl oz
- 10% cream - 1 cup
- Grated Ginger Root - 1 teaspoon
- Ocean salt - to taste
- Saffron - a pinch
- Ground Black Pepper - to taste
- Garlic - 2 cloves
Step by Step guide
Step 1
Peel the onion and slice it into thin half-rings. Then sauté (simmer on low heat) in a mixture of butter and olive oil. The onion should not be browned, just lightly golden.
Step 2
Meanwhile, peel the potato and cut it into cubes, then boil in salted boiling water.
Step 3
Add the onion and simmer the potato-onion mixture on low heat for about 15–20 minutes, stirring occasionally.
Step 4
Then add the grated ginger root and a pinch of saffron.
Step 5
Blend everything in a blender and add the cream, mix, and season with pepper. Optionally, add garlic — blend again.
