Description
Once, the Italians wondered: what if we made jam from onions? It turned out great, so onion jam is still enjoyed today. It pairs well with meat, blue cheese, and can simply be spread on bread. It is probably the most unusual way to prepare onions, and, pleasantly, it's also quite simple: the key is to keep an eye on the amount of liquid.
Ingredients
- Spanish onions - 2 lbs
- Olive Oil - 1 fl oz
- Butter - 0.5 oz
- Raw cane sugar - 5.3 oz
- Red Grape Juice - 7 fl oz
- Red Wine Vinegar - 2 fl oz
- Balsamic Vinegar - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Slice the onion into thin strips.
Step 2
Heat olive oil and butter in a skillet and add the onion.
Step 3
Sauté over medium heat, stirring constantly, until the onion becomes translucent.
Step 4
Add a little water and let the onion simmer until soft, stirring occasionally.
Step 5
When the water has evaporated, pour in the wine and let it reduce for 3–5 minutes.
Step 6
Then add the vinegars.
Step 7
Add sugar.
Step 8
Cook over low heat, stirring until the mixture reaches a jam-like consistency. This will take about 2 to 3 hours. If necessary, add water to prevent the jam from becoming too dry.
Step 9
Finally, add salt and pepper to taste.
Step 10
Serve the jam with toast or crackers.
