Description
Under the guidance of a famous American chef, onion soup transforms from a first course into a standalone dish. America, captivated by French cuisine in the 1960s, once again reinterpreted the classic. The recipe includes beef broth (sometimes from a can), olive oil, white wine (sometimes brandy), bay leaf, sage, and even sugar for caramelizing the onions. From a humble stew of street vendors and other establishments in 'the belly of Paris', onion soup has become a gastronomic symbol of France, which now takes at least an hour and a half to prepare. Ingredients
- Olive Oil - 1 tablespoon
- Butter - 1 tablespoon
- Spanish onions - 8 cups
- Sugar - 1 teaspoon
- Wheat Flour - 2 tablespoons
- Campbell's Beef Broth - 2 qt
- Bay leaf - 1 piece
- Sage - 0.5 teaspoon
- Salt - 1 teaspoon
- Ground Black Pepper - to taste
- Apple Wine - 1 cup
- Parmesan Cheese - to taste
- French Baguette - 1 piece
Step by Step guide
Step 1
Melt the butter together with the olive oil in a saucepan. Add the sliced onions and stir well. Cover with a lid and sauté for 15-20 minutes, stirring occasionally, until the onions are soft and translucent. Then remove the lid and increase the heat, adding salt and sugar. Caramelize the onions, stirring, for 30 minutes until they turn brown. Then reduce the heat again, add the flour, and more oil. Cook for 2 minutes.
Step 2
Add a cup of broth and reduce the heat. Stir and simmer. Then add the bay leaf, wine, sage, and the remaining broth. Cook on low heat for another 30 minutes.
Step 3
Serve with toasted baguette and Parmesan cheese.
Step 4
To prepare the croutons, slice the baguette, spread with olive or butter, and lay out on parchment paper in a single layer. Move the parchment to a baking sheet and place in an oven preheated to 356°F for 10-20 minutes. During this time, flip the slices to brown both sides.
Step 5
Pour the finished soup into ovenproof ceramic bowls. Place a slice of bread on top of each serving. Sprinkle with cheese (Swiss or Parmesan works well) and bake in the oven at 392°F until a golden crust forms. Serve immediately.
