Ingredients
- Onion - 4 heads
- Broccoli - 3.5 oz
- Water - 1 qt
- Olive Oil - 1 tablespoon
- Truffle Oil - to taste
- Salt - to taste

- Egg noodles for wok - 3.5 oz
- Scallions - ⅓ bunch
- Leek - ⅓ stalk
- Croutons - 2.8 oz
Step by Step guide
Step 1
Peel the onion, cut it in half, and place it in boiling salted water. Cook until the onion is soft.
Step 2
Remove the cooked onion, and add broccoli, olive oil, truffle oil, and black pepper to the resulting broth. Cook the broccoli until tender.
Step 3
Place the onion and broccoli in a blender and puree using the blending attachment.
Step 4
Add the resulting puree along with the wheat noodles to the broth and cook until the noodles are done.
Step 5
Serve the soup hot, topped with rye croutons, finely chopped green onion, and leek.
