  • Garlic - 3 cloves
  • Chopped Sage Leaves - 1 bunch
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Chicken Broth - 1 qt
  • Ciabatta - 4 pieces
  • Gruyère cheese - 3.5 oz

Step by Step guide

Step 1

In a heavy-bottomed pot, melt the butter, add the olive oil, chopped sage leaves, and minced garlic.

Step 2

Add the sliced onions, salt, and pepper. Sauté the onions until soft for 30-40 minutes over low heat, stirring occasionally.

Step 3

Add the chicken broth, bring to a boil, and turn off the heat. Pour the soup into bowls or soup pots.

Step 4

Grill the ciabatta pieces, cover each pot with a piece of ciabatta, grate cheese on top, add sage leaves, and drizzle with olive oil.

Step 5

Place the pots under the broiler to melt the cheese, then serve.
