- Leek - 1 piece

- Celery salt - 1 piece
- Green peppercorns - to taste

Step by Step guide
Step 1
Cut the roots into strips and place them in boiling water. Finely chop the yellow onion and leek (but not into rings), mash with salt in a porcelain dish, and add to the boiling broth. Add pepper.
Step 2
When the onion softens and the broth turns green, add salt, sprinkle in the chopped herbs, and remove from heat after 3 minutes. Cover and let steep for 5 minutes.
