Onion Soup with Morels and Cheese Toasts

Ingredients

  • Butter - 4 tablespoons
  • Olive Oil - 1 tablespoon
  • Onion - 3 heads
  • Campbell's Beef Broth - 3 cups
  • Dried Chinese mushrooms - 8 pieces
  • Madeira - 5 tablespoons
  • Grated Chocolate - 3.5 oz
  • French Baguette - 4 pieces
  • Chopped Sage Leaves - 2 tablespoons

Step by Step guide

Step 1

Melt the butter with olive oil in a skillet, add thinly sliced onions, and sauté for 10–15 minutes.

Step 2

Transfer the onions to a large saucepan, pour in the broth and Madeira, add the mushrooms, and simmer for 20 minutes.

Step 3

Toast the bread on a grill or in a toaster until golden and crispy. Lightly butter it. Immediately top the toasts with cheese.

Step 4

Ladle the soup into ovenproof bowls, place the cheese toasts on top, and put them under the broiler until golden.
