Ingredients
- Scallions - 3 bunches
- Spanish onions - 1 head
- Garlic - 1 clove
- Orange Bell Peppers - 1 piece
- Butter - 3 tablespoons
- Rice Noodles - 7.1 oz
- Chicken Broth - 1 qt
- Soy Sauce - 3 fl oz
- Potato protein - 2 tablespoons
- Red Long Chili Peppers - to taste
Step by Step guide
Step 1
Peel the yellow onion and slice it into half-rings.
Step 2
Wash the green onions and chop them.
Step 3
Peel the garlic and finely chop it.
Step 4
In a pot, heat the butter and sauté the yellow onion for 2–3 minutes, stirring, then add the garlic and green onions and sauté, stirring, for about five minutes.
Step 5
Add the red bell pepper, seeded and sliced into thin strips, to the onions. Sauté all the vegetables for about three minutes, stirring.
Step 6
Pour in the broth, bring to a boil, and simmer on low heat for 5–6 minutes.
Step 7
Mix the soy sauce with the starch and add it to the soup.
Step 8
While the broth with vegetables is cooking, boil the rice noodles in boiling water for 6–7 minutes, drain them in a colander, and rinse with cold water. Then, add the noodles to the boiling broth and immediately turn off the heat.
Step 9
Let the soup sit for 5 minutes. Serve sprinkled with ground red pepper.
