- Vanilla extract - 2½ tablespoons
- 10% cream - 4 cups
- Milk - 0 fl oz
- Sugar - 1¾ cups
- Orange juice concentrate - 12 fl oz

Step by Step guide
Step 1
In a saucepan, combine milk with cinnamon, cloves, and half a teaspoon of vanilla extract. Place over low heat and remove from the heat just before boiling.
Step 2
In a separate bowl, mix the egg yolks with sugar and whisk vigorously until fluffy.

Step 4
Transfer the egg-milk mixture to the saucepan and place over medium heat. Heat without boiling, stirring continuously with a whisk until the mixture begins to resemble a cream.
Step 5
Remove the cloves from the mixture, pour it into a large pitcher, and refrigerate for 2 hours.
Step 6
While stirring thoroughly, add the cream, remaining vanilla extract, and nutmeg to the mixture.
Step 7
Place the eggnog container in the refrigerator overnight, covered with a lid or plastic wrap.
Step 8
Before serving, add the orange juice and ginger ale to the eggnog, mix well, and pour into glasses.
