Oven-Dried Tomatoes

Ingredients

  • Tomatoes - 2 lbs
  • Olive Oil - 3 fl oz
  • Unrefined Sunflower Oil - 3 fl oz
  • Dried Rosemary - to taste
  • Dried Chamomile - to taste
  • Fresh basil leaves - to taste

Step by Step guide

Step 1

First, wash and dry the tomatoes.

Step 2

Then, coat them with olive oil (about a tablespoon) to prevent the skin from drying out completely.

Step 3

Cut the tomatoes in half or quarters. If there are many seeds and little flesh, it's better to remove the seeds, as all the water will evaporate and the flavor will be lost, leaving only the seeds. Therefore, choose meaty and firm tomatoes.

Step 4

Place the tomatoes on a baking sheet lined with parchment paper, set the oven to 212°F with convection, and leave them for 4-5 hours with the door slightly open. If using a gas oven, there is a significant risk of cooking the tomatoes, so decide accordingly.

Step 5

Once they are dried, remove them from the oven, let them cool, layer them in a jar, sprinkling with aromatic herbs. Pour the mixture of olive oils over them and let them steep for a week or two.

Step 6

Optionally, you can add a clove or two of garlic to the jar - it won't hurt!
