Oysters with Chanterelles and Parmesan
Ingredients
- Butter - 2 tablespoons
- Shallot - 0.7 oz
- Pickled Chanterelles - 7.1 oz
- Chopped Sage Leaves - 1 tablespoon
- Meyer Lemon Juice - 2 tablespoons
- Crème fraîche - 2 tablespoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Fresh Oysters - 12 pieces
- Grated Pecorino Pepato Cheese - 1.1 oz
Step by Step guide
Step 1
Preheat the grill in the oven.
Step 2
In a small skillet, melt the butter over medium heat. Add the finely chopped shallot and sauté for a minute. Then add the finely chopped chanterelles and lemon juice. Allow the liquid to evaporate for about a minute. Stir in the parsley and crème fraîche. Season with pepper.
Step 3
Clean the oysters well and remove the top shells.
Step 4
Place the oysters in their shells on a baking sheet, adding a small amount of the mushroom mixture to each and sprinkle with cheese.
Step 5
Place under the grill until golden brown for a couple of minutes and serve immediately.
