Pâté with Chestnuts
Ingredients
- Chicken Liver - 17.6 oz
- Peeled chestnuts - 7.1 oz
- Spanish onions - 2 heads
- Garlic - 4 cloves
- Butter - 7.1 oz
- Thyme - 2 sprigs
- Madeira - 7 fl oz
- Milk - 1 cup
- Rosemary - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - to taste
Step by Step guide
Step 1
Soak the chicken liver in milk for 30 minutes, remove and pat dry with a paper towel. Discard the milk.
Step 2
Peel the chestnuts, place them on a baking sheet, drizzle with vegetable oil, sprinkle with rosemary leaves, and roast for 15 minutes in the oven at 356°F.
Step 3
Finely chop the onion and garlic, sauté in vegetable oil until soft. Separately, sauté the liver and thyme in vegetable oil for 1 minute on each side. Season with salt, add the Madeira, bring to a boil, remove from heat, and let cool.
Step 4
Blend the liver, Madeira sauce, onion, garlic, thyme, butter, and chestnuts in a food processor.
Step 5
Pass the pâté through a sieve, add salt and pepper to taste. Place in a rectangular mold and refrigerate for 2 hours.
