Ingredients
- Garlic Greens - 15.9 oz
- Olive Oil - 4 tablespoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Peas - 2 cups
- 30% Cream - 1 cup
Step by Step guide
Step 1
Cut off the dark green parts of the garlic greens and slice them crosswise into 1 cm pieces; slice the bulbs and light green parts crosswise into 0.5 cm pieces.
Step 2
Heat 2 tablespoons of oil in a large skillet over medium heat. Add the bulbs and light green parts of the garlic, season with salt and pepper, and sauté until semi-soft, about 8-10 minutes. Add the green parts of the garlic and sauté, stirring frequently, for about 3 minutes until soft.
Step 3
Add 4 cups of water and bring to a boil. Add the peas, reduce the heat, and simmer until the peas are soft, about 5 minutes.
Step 4
Let it cool slightly, blend in a blender with 2 tablespoons of oil until smooth, adding water as needed. Strain the soup through a fine sieve into a clean pot, season with salt and pepper. Before serving, quickly reheat (to set the color).

Whip the cream in a medium bowl with a whisk until soft peaks form; season with salt and pepper. Serve the soup garnished with whipped cream.
