Pea Cream Soup with Parsley
Ingredients
- Butter - 1.8 oz
- Onion - 1 head
- White bread - 1 piece
- Chopped Sage Leaves - 1 teaspoon
- Pea shoots - 7.1 oz
- Chicken Broth - 10 fl oz
- Salt - to taste
- Cream - 3 fl oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Melt part of the butter in a pot. When it foams, add finely chopped onion. Sauté for 3 minutes, stirring.
Step 2
Meanwhile, heat the remaining butter in a skillet. Remove the crust from the bread, cut it into small cubes, and fry for 6–8 minutes until the croutons are golden brown. Add seasonings to taste, then sprinkle with finely chopped parsley. Mix well. Pour onto a paper kitchen towel. Pat dry.
Step 3
Add the peas to the onion and sauté for another 4 minutes until the peas soften. Stir occasionally.
Step 4
Pour in the broth and cream, keep on the heat until warmed through. Transfer to a blender and blend until smooth. Add seasonings to taste. Pour back into the pot. Heat again.
Step 5
Ladle into soup bowls and add croutons.
