Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Add the peas to boiling water and cook for 2 minutes. Transfer the peas to ice water to preserve their color. Drain in a sieve.
Step 3
Remove the seeds from the chili pepper and finely chop it.
Step 4
Cut the bacon into small pieces and fry it over low heat until it turns crispy and golden.
Step 5
Separate a quarter of the peas and set aside. Place the remaining peas in a blender, add milk and chili pepper, and blend until smooth.
Step 6
In another bowl, crack the egg, add the flour with the baking powder, and mix with the pea puree.
Step 7
Add the bacon and dried thyme, season lightly with salt, and stir again.
Step 8
Add the remaining whole peas and gently stir to ensure the peas retain their shape.
Step 9
Heat a skillet with oil, spoon the batter to form pancakes, and fry until golden brown on each side for 2–4 minutes.
Step 10
Transfer the pancakes from the skillet to a paper towel to remove excess oil.
Step 11
Serve the pancakes with Greek yogurt.
