Description
Instead of pork ribs, you can use any other smoked meat.
Ingredients
- Pea shoots - 8.1 oz
- Potato - 3 pieces
- Smoked pork knuckle - 17.6 oz
- Carrot - 1 piece
- Onion - 1 head
- White bread - ½ pieces
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Water - 3 qt
Step by Step guide
Step 1
Rinse the peas, soak them in cold water, and let them sit for 2 hours. After that, drain the soaking water.
Step 2
Pour the peas with water (the amount is specified in the ingredients) and place it over heat. The peas need to be stirred occasionally to prevent them from sticking to the bottom, and any foam that forms on the surface should be skimmed off. Cook for about an hour.
Step 3
For the croutons, remove the crusts from the bread, cut it into cubes about one centimeter on each side, spread them on a baking sheet, and place in an oven preheated to 356°F for 15–20 minutes.
Step 4
Peel the potatoes and cut them into small cubes, then add them to the pot with the peas. Cook for another 15 minutes.
Step 5
In a skillet, heat the oil and sauté the chopped onion until it becomes translucent.
Step 6
Then add the grated carrots and sauté until they are tender.
Step 7
Add the vegetables to the soup.
Step 8
Add the diced smoked meat.
Step 9
Stir and cook for another 10 minutes. Season with salt and pepper to taste.
Step 10
Remove the finished soup from the heat, cover it with a lid, and let it steep for 15 minutes. Serve with croutons.
