Ingredients
- Leeks - 7 stalks
- Frozen Green Peas - 17.6 oz
- Potatoes - 14.1 oz
- Garlic - 1 clove
- Mint - 1 bunch
- Vegetable Broth - 1 qt
Step by Step guide
Step 1
Thinly slice the leeks.
Step 2
Peel the garlic clove and crush it with the flat side of a knife.
Step 3
Peel the potatoes and cut them into pieces.
Step 4
In a large pot, heat 2 tablespoons of vegetable broth, add the leeks and garlic. Cook for 10 minutes, stirring continuously, until the leeks are soft.
Step 5
Pour in the remaining broth and 700 ml of water, add the chopped potatoes and green peas; bring to a boil. Reduce the heat and simmer covered for 15 minutes until the vegetables are soft, then cool.
Step 6
Blend the soup in a blender.
Step 7
Gently heat the finished soup, add the mint, and serve immediately.
