You can smoke the halibut yourself or use a pre-smoked one.
Ingredients
- Chicken Broth - 17 fl oz
- Green Peas - 10.6 oz
- Halibut - 5.6 oz
- Shallot - 3.5 oz
- 33% Cream - 1 cup
- Sugar - a pinch
- Vegetable Oil - 2 tablespoons
- Meyer Lemon Juice - 1 tablespoon
- Nutmeg - a pinch
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the halibut into long, narrow strips.
Step 2
Dice the shallots and sauté in oil until golden. Add the peas, pour in the broth, and simmer covered for half an hour.
Step 3
Blend the cooked peas with the broth into a puree, seasoning with salt, pepper, sugar, nutmeg, and lemon juice.
Step 4
Whip part of the cream, mix it with the pea puree, and warm it up.
Step 5
When serving, pour the soup puree into bowls, placing a slice of fish in each, and garnish with cream.
